Watermelon & Arugula Chicken Salad

As delicious as a freshly grilled cheeseburger is on a summer evening, we can all get sick of eating them too frequently during the season. Some evenings call for something quick, light, and refreshing. Try this on one of these nights. Run by the store and pick up the following ingredients:

+ 1 rotisserie chicken
+ 1 seedless watermelon
+ 1 bag of arugula
+ 1 lemon
+ 1 bunch of mint
+ 1 red onion

Thinly slice the onion, shred the chicken (discarding skin & bone), chop the watermelon (discarding the rind), and add it to the arugula in a bowl. Make a quick vinaigrette with olive oil, lemon juice, lemon zest, salt and pepper. Gently toss to combine. Enjoy!
