Quick Refrigerator Granola Bars

« Tao of Moving More & Eating BetterWhy Diet? »

Great for a healthy treat after a workout!

INGREDIENTS
+ 2 ½ C rolled or quick oats
+ ½ C slivered almonds
+ ½ C raisins (or other dried fruit such as cranberries)
+ ⅔ C peanut or almond butter (unsweetened)
+ ½ to ⅔ C honey, agave nectar, or other sweetener (just enough to bring mixture together)
+ ⅛ tsp sea salt

DIRECTIONS
1. Mix together your dry ingredients in a large mixing bowl.
2. Whisk together nut butter, sweetener, and salt in another bowl, then add mixture to dry ingredients. The mixture should stick together without any loose dry ingredients. Add more nut butter and/or sweetener if it seems overly dry.
3. Line a 9”x13” glass dish with aluminum foil, then pour mixture into the glass dish. Flatten the mixture so it’s of uniform height throughout the dish. Cover the dish and put in refrigerator overnight to set. Cut out portions when desired and keep unused portion in the refrigerator
