Savory Baked Apple - fit815 FitMe Wellness

Want a delicious dinner in the middle of the week? Make this as part of your Sunday food prep day. Pro tip: It’s even better two to three days later!

Ingredients:
½ Vidalia onion, finely chopped
1 Tbsp butter
8 oz. ground turkey
½ tsp cinnamon
½ tsp allspice
¼ tsp ground ginger
½ tsp salt
¼ tsp freshly ground black pepper
½ C toasted pine nuts
½ C shelled unsalted pistachio nuts
9 medium-sized Granny Smith apples
2 C apple cider

Step 1: Preheat oven to 350 degrees. In a skillet over low heat, sauté the Vidalia in the butter for 5 minutes or until translucent. Add turkey and spices and cook slowly for 10 to 12 minutes until cooked through. Stir in nuts. Take 1 apple, peeled and cored and chopped finely; add to the meat mixture and remove from the stove, allowing it to cook in the warmed pan.

Step 2: Core the 8 remaining apples and stuff with the mixture. Place the stuffed apples in a shallow baking dish. Pour cider (room temperature) around the apples. Put dish in the oven and bake for 40 minutes. Remove and cover with foil. Reheat as needed throughout the week in a 350 degree oven (or toaster oven) for 5 minutes. This is also delicious at room temperature if you’re looking to bring something delicious for lunch at your office.
