Quinoa Kale Salad
This protein-packed power salad takes just 30 minutes to make and serves four!
+ 1 C quinoa
+ 1 clove garlic
+ 1 bunch kale
+ 1/2 C grapes
+ 1 medium tomato
+ 1/4 C chopped onion
+ 1/2 C ready-to-eat protein (cooked beans, chicken, etc.)
+ 1/4 C nuts or seeds of your choice
+ 3 Tbsp extra virgin olive oil
+ 3 Tbsp fresh lemon juice
1. Start by cooking the quinoa. Put 2 cups of water, a dash of salt and a clove of garlic into a saucepan and turn heat to high. Once water comes to a boil, add the quinoa, cover the pot, and turn heat to medium; let the quinoa cook for 5 minutes. Next, turn heat to low and continue to cook for 10 more minutes until all the water is gone. Turn the heat off and let the quinoa sit while you prepare the rest of the ingredients.
2. Wash and cut the produce. Remove kale stems and chop leaves into bite-sized pieces, slice grapes in half, and core and dice the tomato.
3. In a medium-sized bowl, mix all the ingredients together.
